Tamarind is a multipurpose, perennial and evergreen tree which belongs to family Fabaceae and sub family Caesalpiniaceae.
Tamarind is inherent to Tropical Africa and got naturalized in over 50 countries worldwide. India and Thailand are the major production areas in the Asian region. Countries such as Sri Lanka, Bangladesh, Indonesia.
Mexico and Costa Rica are the biggest producers of Tamarind for America, Gambia, Senegal and Zambia. Tanzania is a minor producer country in Africa. Tamarind pulp possesses 3.1% protein, 20.6% water, 0.4% fats, 3.0% fiber, 70.8% carbohydrates and 2.1 % ash.
